*75g Mainland butter, diced, plus 1 tbsp, melted
*200g Homebrand sugar
*4 sheet puff pastry
#Preheat the oven to 200C.
#Cover the apples with water and a squeeze of lemon juice.
#Place the sugar and butter in a small frying pan (the one in which you will bake the tart) and place over medium-high heat.
#Melt the sugar and butter together and allow the sugar to caramelise to a toffee colour.
#Arrange the apples in a tidy pattern on top of the caramel.
#Use a cutter or knife to create a circle out of the puff pastry which is slightly bigger than the pan used for the tart.
#Place the pastry over the top of the apples and tuck the edges down inside the pan.
#Brush the top of the pastry with the melted butter and use a knife to create small holes for the steam to escape.
#Place in the oven for 15-20 minutes or until pastry is puffed and golden.
===Tips===
*Peel apples a day in advance to dry them out.
*Bring the tatin up to the caramel stage on the stove top before putting in the oven.
*Use the back of a spoon to tighten the pastry around the the outside of the apple.

*1 teaspoon pure vanilla extract
*Zest of 1 large lemon (outer yellow skin of lemon)
*2 teaspoons baking powder
*1/4 teaspoon salt
*1 cup (115 grams) confectioners' (powdered or icing) sugar, sifted
*2 tablespoons fresh lemon juice
===Directions===
#In the bowl of your electric mixer (or with a hand mixer) beat the butter and sugar until light and fluffy and pale in color (about 3 minutes).
#Add the eggs, one at a time, mixing well after each addition.
#Beat in the vanilla extract and lemon zest.
#Sift together the flour, baking powder and salt and then add to the batter along with the lemon juice. Mix only until incorporated.
#Pour the batter into the prepared pan, smoothing the top with an offset spatula.
#Bake about 40 - 45 minutes, or until a toothpick inserted in the center comes out clean.
#Place on a wire rack to cool, then gently remove the sides of the pan.
===Lemon Frosting:===
#In a bowl, combine the sifted confectioners' sugar with the 2 tablespoons lemon juice.
#(You want the icing to be thicker than a glaze but still thin enough that it will just run over the sides of the cake.
#If not the right consistency add more lemon juice or powdered sugar, accordingly.)
#Pour the frosting over the top of the cake, allowing the icing to drip down the sides.
#Let the icing set before covering.
*This cake will keep for several days in an airtight container.

This method requires a server to hold the truck.
===Setup the server for the trunk===
====Set up the branch====

bzr init-repo --no-trees sftp://chris@orac/media/raid/Development/bzr

====Set up the Repository====

bzr init sftp://chris@orac/media/raid/Development/bzr/cf

====Checkout the Repository====

bzr checkout sftp://chris@orac/media/raid/Development/bzr/cf .

====Add Files and Commit====
Now add your files to this directory then commit them to synchronise with the server

bzr add
bzr commit -m "Initial Load"

===Usage===
Once it is set up on the clients all you need to do is:
====To create a linked copy to the current directory====
Only do this once

bzr checkout sftp://chris@orac/media/raid/Development/bzr/cf .

====Commiting work====
Once this has been done edit as normal,once you are happy with the changes

bzr commit

will commit changes to the client and server automatically.
====Latest Version from Server====
To ensure you have the latest version from the server

bzr update

===List commits===

bzr log

===Revert to a previous commit===

bzr revert -r 4

where 4 is the version number you got from the bzr log

===Problems===
If you get Conflict Detected type error try

-First problem after installing nvidia driver was 640x480 resolution. Eventually fixed this with

sudo displayconfig-gtk

Prior to this I installed envyng-gtk to get the latest nvidia driver, but I probably didn't need to.
==RAID / RAID5 ==
First tried using evms as used previously to create/maintain the RAID. This broke everything, and I had to remove/uninstall theis from the root prompt on the recovery console.

Successfully recreated the RAID installing and using mdadm

sudo mdadm --assemble --scan

This will attempt to locate any existing RAIDs
Then added

/dev/md0	/home/n2o/data ext3 defaults	0	2
/dev/sdc1 /home/n2o/data/tera           ext3    defaults        0       2

to /etc/fstab (adding in the 1TB hard drive while I am at it)

In 10.04 I created a new RAID5 array.
In order to get it to mount after a reboot (and adding it to fstab) I had to do the following

sudo mdadm --examine --scan --config=mdadm.conf >> mdadm.conf

Don't really need smbfs, but what the heck).

Create the users for the system, add them to user group user (not necessary, but could make things easier in the future). Use the following user IDs for each user to pick up the previous permissions
*1001 chris
*1002 mina
*1003 bener
*1004 mark
*1005 almina

Add these users to samba

sudo smbpasswd -a chris

for each user.

In 10.04 I also had to add the following in /etc/samba/smb.conf

follow symlinks = yes
wide links = yes

1 ¼ tbsp baking powder

6 tbsp shortening

Asado Filling:

2 lbs pork, chopped into small pieces

3 tbsp lard or shortening

2 tbsp garlic, minced

1 large onion, minced

2 tbsp cornstarch, diluted in 1/4 cup water

4 tbsp soy sauce

4 tbsp sugar

3 tbsp oyster sauce

1 tbsp hoisin sauce

Watch the cooking video:

Cooking procedure:

1. Cook the Asado filling

1.1 Heat the shortening in a pan

1.2 Saute the garlic and onions

1.3 Put-in the pork and cook until the color of the outer part turns light brown

1.4 Add the soy sauce, oyster sauce, hoisin sauce, and sugar then mix well. Simmer for
40 minutes

1.5 Put in the corn starch (diluted in water) and mix until the texture of the sauce becomes
thick then set aside

2. Make the dough

2.1 Place warm water in a bowl then add the yeast and sugar and mix well.
Leave the mixture for 10 to 15 minutes

2.2 In a mixing bowl, put-in the flour, baking powder, shortening (or lard), and the yeast-
sugar-water mixture then mix well (bubbles should have formed on top by then).

2.3 Knead the combined mixture until the texture of the dough becomes fine. Let the dough
rise by setting it aside for at least an hour (place in the mixing bowl and cover the top ).

2.4 Knead the dough again then cut into individual slices (this will be the dough per
individual siopao).

3. Flatten the dough until a round shape is formed using a rolling pin.

4. Put the asado filling on the middle of the flattened dough and wrap. (refer to the video for the technique if interested)

5. Place the siopao in a steamer and steam for 15 minutes.

6. Serve hot. Share and enjoy!
