<div style="column-count:3;-moz-column-count:3;-webkit-column-count:3">
*115g Room temp. butter
*145g Shortening
*1 1/4 tsp. Vanilla Extract
*1/2 tsp.(113g) Butter Flavour
*3-6 tsp. water
*4 cups Icing Sugar
*Pinch of Salt
</div>

===Directions:===
#Start off by creaming together your shortening and butter on medium speed for 2min.
#Add in your salt, vanilla, and butter flavour and mix until incorporated.
#Add in half of the icing sugar and 2 tsp of water.
#Mix on low speed until combined, then mix on high speed for 2 min.
#Add in remaining icing sugar and 1 tsp of water, mix on low speed until combined, then mix on high speed for 3 min.
#If icing seems too stiff add additional water.
*Water should be adjusted according to climate. If there is a lot of humidity in the air only add in 3 tsp of water. If you are making icing in the winter and it is very cold, you might need to add in all 6 tsp. of water to achieve the desired consistency. If your icing is to soft it may be because you have added to much water, or it is very hot or humid where you live. Try lowering the water content a bit to make a stiffer icing, you can also stiffen it up by adding in extra icing sugar. If your icing is to stiff, try adding in more water to soften it up a bit.. You can make this icing up to a week ahead of time. Store in air tight container at room temperature, when you ready to use it just whip it up on your mixer and decorate away. However fresh icing is much easier to work with. Store in air tight container at room temperature.

*Vegetable oil, if unmolding the panna cotta
*1 cup plain Greek yogurt
*1/4 cup sugar
*1/2 tsp vanilla bean paste or vanilla extract
</div>
===Instructions===
*If you plan to unmold the panna cotta onto plates, lightly coat the inside of 4 (6-ounce) ramekins or glasses
with vegetable oil. Otherwise, you can leave them uncoated.
#Place the water in a small bowl. Sprinkle the gelatin over water and set aside to soften.
#Place the yogurt and 1/2 cup of the cream in a medium bowl and whisk to combine; set aside.
#Place the sugar and remaining 1/2 cup of cream in a small saucepan over low heat and bring to a simmer, stirring once or twice to dissolve the sugar, about 3 minutes.
#Remove from the heat and stir in the vanilla.
#Add the gelatin mixture and whisk to dissolve into the warm cream.
#Pour this mixture into the bowl of Greek yogurt and whisk until smooth.
#Divide the mixture evenly among the ramekins or glasses.
#Cover loosely with plastic wrap and refrigerate at least 4 hours or overnight.
*Serve the panna cotta straight from the ramekins or, if you planned to unmold them, bring a small saucepan of water to a simmer and dip the bottom of one of the ramekins or glasses into the water for 5 seconds. Place a serving plate on top of the ramekin and invert it, shaking gently to help the panna cotta fall out. If it does not fall out easily, return to the warm water bath for another 2 seconds. Repeat with remaining ramekins.

<div style="column-count:3;-moz-column-count:3;-webkit-column-count:3">
*115g Room temp. butter
*145g Shortening
*1 1/4 tsp. Vanilla Extract
*1/2 tsp. Butter Flavour
*3-6 tsp. water
*4 cups Icing Sugar
*Pinch of Salt
</div>

===Directions:===

<div style="column-count:3;-moz-column-count:3;-webkit-column-count:3">
• 115g Room temp. butter
•145g Shortening
• 1 1/4 tsp. Vanilla Extract
• 1/2 tsp. Butter Flavour
• 3-6 tsp. water
• 4 cups Icing Sugar
• Pinch of Salt
</div>
===Directions:===

Travels, June - July 2019

Mina: /* Mum */

__TOC__
=Plan=

===Initial Idea===
Original idea for trip to Manila near beginning of June 2018. Add on a trip to Italy. No dates decided, though needed to be Spring - Autumn, preferably Summer (Northern hemisphere) as fewer/less bulky clothes would be required. Easter is very late in 2019, and Easter travel in Philippines is not advisable, which made May - September most likely months.

On further planning Verona Opera season runs from late June till late August. Further limiting is which Opera to see, which means being in Verona on one of a very limited number of dates. Working back from that means only 3 realistic travel periods are practical - leaving at the beginning of June, mid July, or mid August.

===Budget===
====Lowest Budget====
Budget planning very difficult in advance. Initial estimate 8k for flights. Accommodation in Manila potentially free, est 200/night accommodation in Italy for 10 days plus 200/day spending. Low budget of 12k.
====Higher Budget====
After investigation costs in Italy much higher with accommodation nearer 300/night, food costs and activities 300/day. Additionally a trip to Disneyland in HK plus activities in Manila added significantly to the budget. Airfares initially estimated too high though. Revised budget 20k.
====Budget Revision====
As planning progressed a more accurate budget was able to be worked out. Initial savings target of 20k, then additional saving on top of that would make things more comfortable. As of March 2019 25k deemed minimum, target is 28k.

===Itinerary Dates Set===
At the end of August Cathay Pacific, my preferred airline, had cheap fares to Rome. After nearly 3 months our savings goals were way ahead of the target, and we could risk buying the tickets. These fares only went till the beginning of July so that meant if we took these flights only the first travel band was an option.
Reworking the schedule I realised a better option than returning to Rome for the flight home (and covering the same ground twice) it was much the same cost to fly back from Paris.
On having the travel band set for June it was time to set the itinerary more accurately. Initially we were going to visit Cinque Terre from a night trip from Florence, but I really regretted not having visited the Amalfi Coast last visit, so that was incorporated instead. It was also cheaper to fly back a day later from Paris by about the same amount as the accommodation costs. In the end the time in Europe expanded from 10-12 days to 20 days.

===Accommodation Booked===
In some ways this was the funnest part. By booking so far out (9 months out) we're guaranteed to get first pick of any place we wanted.
By and large I was after places with history and character, rather than places that were either cheap or luxurious. Hostels were briefly considered, especially at the earlier planning stages, but for 3 of us they worked out no cheaper and had greater drawbacks than simply getting a room at a B&B or hotel.

Knowing that we'd be jetlagged on arriving in Rome, and since we'd be staying there for some time I wanted a place that was comfortable, and a quite location but not too far from everything, and had a kitchen. Booking a ticket for the Arena at Verona and accommodation there was also a priority, since the whole trip was structured around that. The Amalfi Coast was also a challenge - it's expensive and travel there is difficult. I discovered a walk I'd like to try, and ended up deciding to stay in a village at the end of the walk.

Mina: /* Mum */

__TOC__
=Plan=

===Initial Idea===

===Budget===
====Lowest Budget====
Budget planning very difficult in advance. Initial estimate 8k for flights. Accommodation in Manila potentially free, est 200/night accommodation in Italy for 10 days plus 200/day spending. Low budget of 12k.
====Higher Budget====
After investigation costs in Italy much higher with accommodation nearer 300/night, food costs and activities 300/day. Additionally a trip to Disneyland in HK plus activities in Manila added significantly to the budget. Airfares initially estimated too high though. Revised budget 20k.
====Budget Revision====
As planning progressed a more accurate budget was able to be worked out. Initial savings target of 20k, then additional saving on top of that would make things more comfortable. As of March 2019 25k deemed minimum, target is 28k.

===Itinerary Dates Set===

===Accommodation Booked===

<div style="column-count:3;-moz-column-count:3;-webkit-column-count:3">
*1 tbsp dry yeast (9 grams)
*55 g / 1/4 cup caster sugar (superfine sugar), or sub with normal white sugar
*1/2 cup / 125 ml warm water
*600 g / 20 oz bread flour (4 1/2 US Cups)
*1 1/2 tsp salt
*1 cup / 250 ml milk, lukewarm
*50 g / 3.5 tbsp unsalted butter, melted and cooled
*2 eggs, at room temperature, beaten with fork
</div>
===Brushing:===
*1 tbsp butter, melted
===Instructions===
#Place the yeast and 2 teaspoons of the sugar in a medium bowl, then pour in water.
#Leave for 5 minutes until it froths.
#Place flour, remaining sugar and salt in a bowl. Mix to combine.
#Make a well in the centre. Add milk, butter, eggs and pour in the yeast liquid, including all froth.
#Mix until combined with wooden spoon - it will be like a thick muffin batter. Not pourable, but thick and sticky.
===Rise #1:===
*Leave dough in the bowl, cover with a wet (clean) tea towel and place in a warm place (25C/77F+) to rise for around 1 1/2 - 2 hours or until almost tripled in volume. See Note 4 for how I do this (you will laugh - but it works every time!). Dough surface should be bubbly (see video or photos in post).
*Line a 31.5 x 23.5 cm / 9 x 13" tray with baking paper with overhang.
*Remove tea towel and punch dough to deflate, then mix briefly in the bowl to get rid of the bubbles in the dough.
*Dust work surface with flour, scrape dough on work surface.
*Dust top of dough then shape into a log. Cut log into 4 pieces, then cut each piece into 3 pieces (12 in total).
*Take one piece and press down with palm, then use your fingers to gather into a ball, flip (so smooth side is up) then roll the dough briefly to form a ball. This stretches the dough on one side and that's how I get a nice smooth surface on my roll. (For this step, use as much flour as needed to handle dough and avoid piercing inside into the wet dough)
*Place the ball with the smooth side up on the tray. Repeat with remaining dough. Line them up 3 x 4.
===Rise # 2:===
*Spray surface of rolls (or cling wrap) with oil (any), then place cling wrap over the tray.
*Return tray to warm place and leave for 30 - 45 min, until the dough has risen by about 75% (less than double in size).
*Partway through
===Rise #2===
#Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection).
#Bake for 15 - 18 minutes, or until the surface is a golden brown and the roll in the centre sounds hollow when tapped. The surface colour is the best test for this recipe.
#Remove rolls from oven. Brush with melted butter.
#Use overhang to lift rolls onto a cooling rack. Allow to cool to warm before serving.
