===Ingredients===

*4 eggs
*2 tsp vanilla extract
*2 tsp baking soda
*1 tbsp ground cinnamon
*1/2 tsp salt
*1 1/2 c soft brown sugar
*2 c flour
*1 tsp nutmeg
*3/4 c veg./ canola oil
*3 c grated carrots
*1 can crushed pineapple 
*3/4 c buttermilk
*1 1/2 c grated coconut
*1 c chopped walnuts

===Cream cheese icing===

*125g butter,softened
*125g cream cheese,softened
*2 c icing sugar
*2 tbsp lemon juice
*chopped walnuts to decorate

===Method===
*Preheat oven for 180C and Line 3(9-inch) round cake pans lightly grease. Set aside
#Combine the eggs, vanilla, brown sugar, oil and in a large bowl and beat until thick and creamy.
#Add buttermilk. Then fold in the sifted dry ingredients.
#Then stir in the grated carrots, pineapple and grated coconut.
#Pour into the cake tin and bake for 30 to 45 minutes or until the cake tester inserted in the middle of the cake comes out clean.
#Remove the pans and cool completely on wire racks. 
#Make the icing by beating the butter and cream cheese together until smooth.
#Beat in icing sugar and enough lemon juice to make a smooth icing.
#Spread over the cooled cake and decorate with nuts.
