Base

  • 1 pkt malt biscuits
  • 1/2 pkt gingernut biscuits
  • 1 tbsp lemon juice
  • 75g melted butter

Crush all biscuits in blender.Add lemon juice and melted butter.Press into tin and chill.

Filling:

  • 2 tsp gelatine
  • 2 tbsp warm water
  • 250g cream cheese
  • 250g sour cream
  • 1/2 sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla essence

Direction

  1. Combine gelatine & warm water.
  2. Beat cream cheese till smooth.
  3. Add sour cream beat till smooth, then add sugar, lemon juice, vanilla essence.
  4. Beat till smooth then place the filling into chilled base and refrigerate.
  5. Decorate with whipped cream and fresh fruits you like.Add extra whipped cream and serve.
