Chewy Lemon Cookies Recipe

INGREDIENTS

• 1 c unsalted butter
• 1 c sugar
• 1 c brown sugar
• 2 eggs
• 2 teaspoons lemon juice
• 2 tablespoons heavy cream
• 2 cups all-purpose flour, sifted
• 4 cups rolled oats, processed to become 2 cups oatmeal flour
• 1/2 teaspoon salt
• 1 tsp baking powder
• 2 tsp baking soda
• 1/2 c white chocolate chips
• 1/2 c macadamia nuts
• 2 cups icing sugar
• 2 tbsp grated lemon zest
• 1/3 cup lemon juice
• glazed citrus fruits, for topping (optional)

COOKING PROCEDURE

1. Use paddle of electric mixer to cream butter and sugars until light and fluffy.
2. Combine lemon juice and cream, then add mixture into the beating butter.
3. Combine flour, oatmeal, salt, baking powder, and baking soda.
4. Stir in chocolate chips and nuts.
5. Scoop dough onto a lined baking pan or cookie sheet.
6. Bake at 190 C for 10 minutes. Cool cookies.

Make Lemon Glaze:

• Blend all ingredients until smooth.
• Spoon over cookies.
• Top with glazed fruits.
