Yummy Lemon Cake

INGREDIENTS

  • Grate rind off 2 lemons:
  • 1 cup Soya oil or similar
  • 2 eggs
  • 1 3/4 cups sugar

Beat, then add:

  • 1/2 teaspoon salt
  • 1 cup plain yoghurt
  • 3 teaspoon lemon juice
  • 2 cups flour
  • 2 tea spoons baking powder

DIRECTIONS

  1. Mix & place in large oiled tin.
  2. Bake 180 C for 40 - 50 minutes till knife comes out clean & edges pulling away from sides of pan.
  3. Should be a light golden colour.
  • No icing needed. Just dust with icing sugar if desired.
