Mina's Carrot Cake

Ingredients
- 4 eggs
- 2 tsp vanilla extract
- 2 tsp baking soda
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1 1/2 c soft brown sugar
- 2 c flour
- 1 tsp nutmeg
- 3/4 c veg./ canola oil
- 3 c grated carrots
- 1 can crushed pineapple
- 3/4 c buttermilk
- 1 1/2 c grated coconut
- 1 c chopped walnuts
Cream cheese icing
- 125g butter,softened
- 125g cream cheese,softened
- 2 c icing sugar
- 2 tbsp lemon juice
- chopped walnuts to decorate
Method
- Preheat oven for 180C and Line 3(9-inch) round cake pans lightly grease. Set aside
- Combine the eggs, vanilla, brown sugar, oil and in a large bowl and beat until thick and creamy.
- Add buttermilk. Then fold in the sifted dry ingredients.
- Then stir in the grated carrots, pineapple and grated coconut.
