Chicken Aloha

Ingredients
- 1 whole chicken (about 1½ kilos), halved
- 4 cups chicken stock
- 4 cups pineapple juice
- 1 tablespoon balsamic vinegar
- ½ cup olive oil
- 1 tablespoon Dijon mustard
- 2 red bell peppers, roasted, peeled and deseeded
- 2 tablespoons brown sugar
- 4 pieces canned pineapple rings, grilled
Preparation
- Boil chicken in stock and pineapple juice until cooked through.
- This will take approximately 40 minutes.
- Air-dry the chicken.
- Combine remaining ingredients (except pineapple rings) in a blender and purée until smooth.
- Coat chicken with this mixture then place on top of a hot grill.
- Continue to baste chicken with the sauce until outer layer is blackened.
- Grill pineapple rings on the side until grill marks form and serve with chicken.
