Chicken Aloha

Ingredients

  • 1 whole chicken (about 1½ kilos), halved
  • 4 cups chicken stock
  • 4 cups pineapple juice
  • 1 tablespoon balsamic vinegar
  • ½ cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 red bell peppers, roasted, peeled and deseeded
  • 2 tablespoons brown sugar
  • 4 pieces canned pineapple rings, grilled

Preparation

  1. Boil chicken in stock and pineapple juice until cooked through.
  2. This will take approximately 40 minutes.
  3. Air-dry the chicken.
  4. Combine remaining ingredients (except pineapple rings) in a blender and purée until smooth.
  5. Coat chicken with this mixture then place on top of a hot grill.
  6. Continue to baste chicken with the sauce until outer layer is blackened.
  7. Grill pineapple rings on the side until grill marks form and serve with chicken.
