Chocolate mousse recipe

- 200g good quality plain dark chocolate (74% cocoa solids), broken into squares
- 6 medium free-range eggs, separated
Method: How to make dark chocolate mousse
- Melt the chocolate in a large bowl over a pan of gently simmering water until smooth.
- Remove from the heat, cool for 10 minutes, then whisk in the egg yolks, one at a time.
- Whisk the egg whites in a clean bowl until stiff, then fold into the chocolate mixture.
- Pour into a serving dish, or individual dishes, cover and chill for 2-3 hours until firm.
Please note: This recipe contains uncooked eggs.
