Ingredients

  • 1 whole chicken breast (about 1 lb.)
  • Vegetable oil
  • 1/3 c. flour
  • 1/4 tsp. salt
  • 1 1/2 tsp. vinegar
  • 1/4 tsp. baking soda
  • 1/3 c. water
  • Sauce for dipping or honey

Directions

  1. Remove bones and skin from chicken; cut chicken into 1 x 1/2-inch pieces.
  2. Heat oil (2 to 3 inches deep) in deep fryer or Dutch oven (or use large saucepan - it require less oil) to 360 degrees.
  3. Mix flour and salt. Mix vinegar and baking soda.
  4. Stir vinegar mixture and water into flour mixture; beat until smooth.
  5. Dip chicken into batter, allowing excess batter to drip into bowl.
  6. Fry in hot oil, 4 to 5 pieces at a time, until golden brown and done, about 4 minutes.
  7. Drain on paper towels.
  8. Serve with sweet-and-sour sauce, barbecue sauce, or honey.
