( Batter )GOLDEN NUGGETS

Ingredients
- 1 whole chicken breast (about 1 lb.)
- Vegetable oil
- 1/3 c. flour
- 1/4 tsp. salt
- 1 1/2 tsp. vinegar
- 1/4 tsp. baking soda
- 1/3 c. water
- Sauce for dipping or honey
Directions
- Remove bones and skin from chicken; cut chicken into 1 x 1/2-inch pieces.
- Heat oil (2 to 3 inches deep) in deep fryer or Dutch oven (or use large saucepan - it require less oil) to 360 degrees.
- Mix flour and salt. Mix vinegar and baking soda.
- Stir vinegar mixture and water into flour mixture; beat until smooth.
- Dip chicken into batter, allowing excess batter to drip into bowl.
- Fry in hot oil, 4 to 5 pieces at a time, until golden brown and done, about 4 minutes.
- Drain on paper towels.
- Serve with sweet-and-sour sauce, barbecue sauce, or honey.
