Ingredients
For the leche flan mixture:
- 325 grams condensed milk
- 5 egg yolks
- 2 tsp. lemon juice
For the puto mixture:
5 egg white
- 2 cups flour mix with 4 tbsp cornflour in 2 cups measuring cup(2 cups cake flour)
- 3/4cup white sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup evaporated milk
- 1 1/12 cups water
- 1 egg
- 1 tablespoons butter, melted and cooled
- 1 pinch salt
Method
- Combine the egg yolks, condensed milk and lemon juice in a mixing bowl and mix gently.
- Using a pastry brush, lightly grease puto molds with melted butter.
- Pour leche flan mixture into puto molds until 1/3 full, and steam for 10 minutes or until set but not fully cooked through.
- Combine the egg white, evaporated milk and sugar in a mixing bowl and blend well.
- In a separate bowl, combine the cake flour, baking powder and salt.
- Add in the egg white mixture and mix well while you pour the water gradually.
Mix well.
- After 10 minutes take the steamed egg yolk and pour in the egg white mixture.
- Pour the puto mixture over the leche flan mixture and steam for 10 more minutes.
- Let the leche flan puto cool for 10 minutes before unmolding. Serve.
