Coconut Rolls

Ingredients for the dough:
- Flour- 50 grams
- Water- 250 grams
- Mix and cook until it forms a custard. When cooled mix with the rest of the ingredients:
- Flour- 4 cups
- Butter- 50 grams
- Egg-1 (optional)
- Yeast- 1 tbsp
- Sugar- 1/4 cup
- Salt- 1 tsp
- Milk- 1 1/4 cup
- Water- remaining to form a firm dough.
- Oil- 2 tbsp
For the filling:
- Freshly scarped coconut- 200 grams
- Condensed milk- 1/3 tin
- Cardamom- 1/4 tsp
- Butter- 25 grams
- Mix everything in a non stick pan and cook until it leaves the sides of the pan.
- Allow to cool down a bit and make 10 balls of equal size
Method:
- Make a dough with the above ingredients and knead until smooth and elastic.
- Allow to rise until double.
- Punch down the dough and divide it into ten equal parts and flatten a bit and place the filling and seal it tightly.
- Arrange on a baking tray and allow to double in size.
- Apply a coating of milk or egg and milk and bake in a preheated oven for 20-25 minutes at 180 degreeC.
