Coconut Rolls

Ingredients for the dough:

  • Flour- 50 grams
  • Water- 250 grams
  • Mix and cook until it forms a custard. When cooled mix with the rest of the ingredients:
  • Flour- 4 cups
  • Butter- 50 grams
  • Egg-1 (optional)
  • Yeast- 1 tbsp
  • Sugar- 1/4 cup
  • Salt- 1 tsp
  • Milk- 1 1/4 cup
  • Water- remaining to form a firm dough.
  • Oil- 2 tbsp

For the filling:

  • Freshly scarped coconut- 200 grams
  • Condensed milk- 1/3 tin
  • Cardamom- 1/4 tsp
  • Butter- 25 grams
  • Mix everything in a non stick pan and cook until it leaves the sides of the pan.
  • Allow to cool down a bit and make 10 balls of equal size

Method:

  1. Make a dough with the above ingredients and knead until smooth and elastic.
  2. Allow to rise until double.
  3. Punch down the dough and divide it into ten equal parts and flatten a bit and place the filling and seal it tightly.
  4. Arrange on a baking tray and allow to double in size.
  5. Apply a coating of milk or egg and milk and bake in a preheated oven for 20-25 minutes at 180 degreeC.
