Apple Cinnamon Muffins recipe

INGREDIENTS

Part 1

  • 190 g all-purpose flour
  • 150 g white sugar
  • 3 g salt
  • 7 g baking powder
  • 2 g ground cinnamon
  • 80 ml vegetable oil
  • 1 egg
  • 80 ml milk
  • 2 apples - peeled, cored and chopped

Part 2

  • 100 g white sugar
  • 40 g all-purpose flour
  • 115 g butter, cubed
  • 3 g ground cinnamon

DIRECTIONS

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease six muffin cups or line with paper muffin liners.
  3. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon.
  4. Mix in oil, egg and milk.
  5. Fold in apples.
  6. Spoon batter into prepared muffin cups, filling to the top of the cup.
  7. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon.
  8. Mix together with fork and sprinkle over unbaked muffins.
  9. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
