Classic meatloaf

Ingredients

  • Cooking spray
  • 1/2 cup chopped onion
  • 6 tbsp ketchup, divided
  • 1/2 cup panko (Japanese breadcrumbs)
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 tsp Worcestershire sauce
  • 3/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1lb steak mince
  • 1 large egg white

Method

  1. Preheat oven to 180°C/350°F/Gas Mark 4.
  2. Heat a small frying pan over medium heat.
  3. Coat pan with cooking spray.
  4. Add onion to pan; cook 6 minutes or until tender, stirring occasionally.
  5. Remove from heat; cool slightly.
  6. Combine onion, 3 tablespoons ketchup, and remaining ingredients in a bowl, and gently stir just until combined.
  7. Place meat mixture on a baking sheet coated with cooking spray; shape into an 8 x 4-inch loaf. #Brush top of loaf with remaining 3 tablespoons ketchup.
  8. Bake 35 minutes or until meat thermometer registers 70°C/160°F at the centre.
  9. Let stand 10 minutes; cut into 8 slices.
