Prawn Fritters

Ingredients

  • 1/2 cup milk
  • 1 egg
  • 1-1/2 tablespoons sweet chilli sauce
  • 400g cooked prawn cutlets, tail removed, chopped
  • 1 cup self raising flour, sifted
  • 3 spring onions, chopped
  • Salt and pepper to taste
  • 1-2 tablespoons oil
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese
  • 1 large avocados, peeled and mashed
  • 1/4 cup chopped coriander
  • 2 teaspoons grated lemon rind
  • 2 teaspoons lemon juice
  • Salt and pepper, to taste
  • extra sweet chilli sauce, to drizzle

How to make it

  1. Whisk together the milk, eggs and sweet chilli sauce.
  2. Stir through the prawns, sifted flour, spring onions and seasoning to combine.
  3. Heat some oil in a large non-stick frying pan and cook tablespoons of mixture over a medium heat for 2-3 minutes each side until golden.Set aside to cool.
  4. Combine the Philly*, avocado, coriander, lemon rind, juice and seasonings in a bowl.
  5. Top fritters with Philly* mixture, drizzle with extra sweet chilli sauce, top with snow pea sprouts and serve.
